Healthy and Delicious Oatmeal Raisin Cookies
After searching the internet for a healthy and delicious cookie recipe, I found the perfect recipe! I decided to make some adjustments to fully develop the flavor, such as incorporating ginger into the cookie mix. The benefit of using oatmeal in cookies is that they provide a nice balanced diet by increasing your fiber, magnesium, folate, iron, zinc, and protein intake. So, not only do these cookies provide a healthy snack alternative, especially compared to other cookies, but they also taste delicious! I highly recommend trying out this amazing recipe while enjoying a nice summer day.
P.S. For the best next-day tasting experience, you should definitely warm it up quickly in the microwave for a soft and warm cookie!
Supplies
Ingredients:
-1 3/4 cups of flour
-1 teaspoon of baking soda
-1 teaspoon of baking powder
-1/2 teaspoon of salt
-1/2 teaspoon of ground cinnamon
-2 cups of steel oats
-1 cup of raisins
-1/2 cup of softened butter (1 stick)
-1 1/4 cups of sugar
-2 eggs (beaten)
-6 tablespoons of molasses
-1/2 teaspoon of ground ginger
Tools:
-1 mixing bowl
-1 kitchen aid with a whisk attachment
-Measuring cups
-1 Mixing spoon
-2 baking sheets
-aluminum foil
-1 pam spray bottle
-1 spatula
Prepare the Ingredients
1) Grab all the ingredients listed in the supplies category above so that everything is out and ready for use
(Take the butter out 30 minutes before baking so that the butter can reach room temperature)
Mix the Wet Ingredients and Sugar Together
1) Place the eggs, butter, sugar, and molasses into the KitchenAid bowl.
2) On a speed of 4 (medium), mix until the whole mixture is homogenous.
3) Once the mixture is homogenous, remove the bowl from the mixer's stand and place it on the side for later use.
Mix the Dry Ingredients
1) In a separate mixing bowl place the flour, baking soda, baking powder, salt, cinnamon, ginger, steel oats, and raisins.
2) With a mixing spoon, mix the whole mixture until well incorporated.
3) Now, place the bowl next to the kitchen aid bowl for the next step.
Incorporate the Dry Ingredients
1) Now that the 2 bowls are next to each other with all the needed ingredients get a measuring cup for 1 cup total.
2) Measuring out 1 cup of the flour mixture, combine the dry ingredients into the wet ingredients one at a time.
(Do not pour another cup into the wet mixture until the flour is well incorporated)
3) Once the flour mixture is completely incorporated into the wet mixture, place the bowl to the side for the next step.
Form and Sweeten the Balls
1) Grab a cookie scoop (about 1 1/2 tablespoons)
2) Next, grab a small bowl and pour some sugar into it
3) Once you scoop the cookie dough, place the ball into the bowl and roll it around the sugar to create a sugar coating
Place the Cookie Dough on the Sheets
1) Preheat the oven to 325 degrees Fahrenheit
2) Grab a baking sheet and place aluminum foil over the whole surface.
3) Once the aluminum foil has been placed, light spray pam over the surface.
4) Now that you have a sugar-coated cookie ball, place the cookie ball onto the baking sheet.
5) Next, press down on each cookie ball to slightly flatten them.
6) Repeat until all of the cookie dough has been used (you may need more than one baking sheet, I used two)
Bake and Rest
1) When the oven is done preheating, place one baking sheet into the oven for 12-15 minutes (I used a total of 13 minutes)
2) Once the cookies are ready, take the baking sheet out of the oven and allow it to cool for 10 minutes before moving.
3) While the cookies are cooling place the next baking sheet into the oven (repeat steps 1 and two).
4) Once all the cookies are cooled, place them on a plate for eating/storage.
