Sweet Potato, Spinach and Parsley Soup
Washed the sweet potatoes clean. Also, washed spinach and parsley. Added the sweet potatoes in the hot pan and boiled it until moist (pic 2)/ Towards the end added parsley and spinach into the boiling water and then turned off the stove. This hot water was good enough to boil the green leafy vegetables. Peeled off the sweet potatoes and cleaned the surface (pic 2-3). Added all the ingredients into a blender and 1-2 cups of water and blend it well (pic 4-5). Added salt and pepper. Adjusted the consistency. Poured it into a bowl. For garnishing, I took full milk cream and decorated with a smiley design (pic 6-8). My son loved the smiley design and enjoyed the soup.
