Healthy Gluten-Free Banana Pancakes

I'm a new mom, so I'm dealing with some of the common motherhood issues. Trying to keep my family happy and healthy, and trying to lose some of the weight I gained during my pregnancy. This yummy pancake recipe is low in calories and fat, and high in nutrients. Here's the deal: You take out the wheat. This would make a great breakfast for anyone trying to lose weight, picky toddlers and children, and people trying to get more nutrients into their diet. Did I mention they're gluten-free! You probably already have all the ingredients in your kitchen!

Ingredients

This is so easy!

- 1 Egg

- 1 Banana

- Cinnamon

This yields three pancakes. You can double and triple as needed depending on how many you are serving and how many pancakes you want.

Macerate

Break down your banana in a bowl, until it is an applesauce consistency. Add in your egg and a pinch of cinnamon, mix.

Heat

Heat your oil, I used a pinch of coconut oil, you could also use butter.

Cook

Lay your batter onto your heated oil as you would a regular pancake. They cook about the same way as your average pancake so you will know when to flip them.

Serve

Cover with your favorite toppings and serve! :)

They aren't gorgeous but they come in at less than 200 calories a serving and match up the pancake consistency pretty well.
