Healthy Egg Scramble
This is a healthy breakfast that takes only minutes to make. It is a mix of vegetables and egg whites. This recipe is flexible and the vegetables used can be easily substituted for other vegetables. It is a colorful dish that starts your day on a good note.
Supplies
2 Large Egg Whites
0.5 cup Chicken Tenders (Sliced)
1 Hotdog (Sliced)
1 Tomato (Diced)
1 Small Onion (Diced)
A Pinch of Salt
A Pinch of Black Pepper
A Pinch of Onion Powder
A Pinch of Turmeric
Some type of oil for the pan
Parsley (for decoration)
Total Time: 20 Minutes (MAX)
Note: You can substitute other vegetables if you want and add other spices. Peppers, carrots, mushrooms, potatoes, and eggplants are just to name a few things you can add.
Prep the Vegtables/Meat
When you have the onion, tomato, chicken tender, and hot dog slice all of them into approximately equal pieces.
You may be skeptical about adding the chicken tender and hot dog but it tastes really good at the end.
Separate the Egg Whites From the Yolk
This step is pretty straightforward. Just take out the yolk. You can keep the yolk if you wish but I took it out.
Add the Chicken Tenders to the Pan
In a heated pan with some olive oil (butter, vegetable oil, corn oil, or any other fat) add the chicken tenders and move them around until they become golden brown.
Add the Hot Dogs
Add the hotdogs to the chicken tenders when they become golden brown and do the same thing that you did with the chicken tenders.
Add in the Onions
When the hotdogs have reached the desired color add in the onions and make sure not to add anything else until the onions have caramelized. It will start to smell good. It should take about 3 minutes.
Add in the Tomatoes and Spices
When the onions have caramelized add in the tomatoes and the spices. Most often tomatoes are always added last because of how much water they have. The spices I listed were just what I used. You can use any spices that you wish and customize the dish. Mix the dish for about 1-2 minutes.
Add in the Egg Whites
Add in the egg whites (with the yolk if you wish). After adding in the egg whites wait for them to turn completely white. It is not necessary but you can flip it if you want so it cooks better.
Bon Appetite
If you prefer you can transfer it to a plate or avoid more dishes later just keep it on the pan. (If you choose to do this just make sure to not put it directly on a surface, like a countertop or a table). If you want to add decoration parsley is a good option.
