Green Cheese Spinach Empanadas

today we will create healthy green empanadas without flour and with pure protein with the help of our air fryer.

The first thing we will do is organize our ingredients to speed up our process.

on the one hand we will have the nutribullet process in which we will create the dough for our empanadas, and on the other hand there will be the process of frying the filling.

Wash the Chicken

Preheat water to wash the chicken prey, after washing it we will transfer it to another pot to cook it for 20 minutes over medium heat, this is done to clean the chicken very well.

To create the empanada dough, we will take the spinach and half a cup of oatmeal flakes, we will pour them into our nutri bullet, we will add 2 tablespoons of olive oil plus a pinch of salt.

Grind the mixture until you have a uniform paste as in the image.

in my case, I made 2 portions, which will finally serve for approximately 5 medium-sized empanadas

I recommend not to abuse the pressure of the nutribullet, since the manufacturer recommends its use for no more than one consecutive minute and with short intervals.

now we will fry the filling, for that we will use the onion, we will cut it into small pieces and put it in the preheated pan.

the temperature will depend on your stove but it is recommended to use medium heat, always under supervision.

When the onion stew is at its point we will add the mushrooms, distributed throughout the pan, I recommend chopping the mushrooms but it is optional, everything will depend on the size of the empanada, as I mentioned with 2 portions, 5 medium-sized empanadas or 3 Large size.

we will be preparing the shredded chicken, the ideal is to have all the ingredients ready at the time of frying since the oil will not give us time to do it step by step

for the cheese we will prepare thin strips which will roll up our filling dough later we will use the cream cheese

Add the Chicken

when we have a stew well mixed with the mushrooms we will add the shredded chicken.

the ideal is to stir the ingredients very well until you have a uniform mixture

and to finish with the filling, we will use the cream cheese, applying it on the stew and stirring gently

It is time to return to our dough, after leaving it sitting for a while, we will take it out of the container with a spoon, but first we will rearrange our table by covering it with the plastic warp

now with the help of your hands, a glass or in the best case a roller, we will crush the dough, and we will make the amount of empanadas that we are going to make in the form of a ball that we will later crush to make them

for the filling it will be according to your criteria if you want it very full of cheese or with more meat it will be your decision, in my case my family loves the mixture of cheese with chicken and mushrooms so I will fill them in such a way that the cheese is melt in every bite.

to close the empanada we will use the plastic warp as a base and we will turn it gently until the dough covers all the filling, check the images.

Now to finish the assembly of our empanada, we will use a bowl to give the characteristic shape, with the help of the plastic warp and the bowl.

we will press on the dough and cut the excess by turning the cup repeatedly

now a little trick to give our empanadas a crispness, with a small kitchen brush we will apply olive oil before putting them in our air fryer, we must not exceed the oil.

Air Fry

after applying a thin layer of oil we will take them to the air fryer, there we will place them for 8 minutes at 190 degrees centigrade on each side, this time may vary depending on the size of the empanada.

for more crispness you can leave them for 10 minutes at 200 degrees but this can vary according to your tastes
