Healthy Carrot Cake Recipe
Everyone thinks that carrot cake is healthy,but actually it is not

When I saw an how much sugar most of the recipes had, I knew I had to tweak the recipe a bit
Some recipes had 6 cups of sugar in the cake and frosting (yikes!)
With this carrot cake, no one will ever know you made it healthier

Ingredients
Four eggs
3/4 cup vegetable oil
1 1/2 cup sugar
2 teaspoons vanilla extract
2 cups whole wheat flour or white flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
3 cups grated carrots
One cup chopped pecans or walnuts
For the frosting:
1/4 cup butter softened
One 8 ounce package neufchatel cheese
2 cups confectioners sugar
1 Teaspoon vanilla extract
1 cup chopped pecans or walnuts
3/4 cup vegetable oil
1 1/2 cup sugar
2 teaspoons vanilla extract

For the frosting:

Making the Cake
Preheat the oven to 350°F
Grease and flour a pan
In a large bowl, whisk together eggs, Oil, sugar, and 2 teaspoons vanilla extract
Next add in the flower a spoon at a time and whisk until no lumps are present
Add in the baking soda, baking powder, salt, and cinnamon. I also added in nutmeg to enhance the flavor of the cake
Start to shred the carrots until you get 3 cups of shredded carrots
The shredded carrots into the cake mixture and fold it in
Next chop up the pecans and fold into the carrot cake mixture
Pour the batter into the greased and floured pan
bake the cake for 40 to 50 minutes or until a toothpick is inserted into the cake and comes out clean
The cake cool

This is a very easy and healthy recipe for a traditional classic, carrot cake
This cake only has 350 calories per serving versus the traditional which has 575 calories per serving
