10mins Gluten-free Breakfast: Healthy Fluffy Flour-less Pancakes
Who says healthy eating can’t include pancakes?! Everyone should be able to enjoy a warm and fluffy pancake. Here goes a quick healthy breakfast recipe. An easy, gluten-free, dairy-free, high protein and low-calorie breakfast in a snap.
The only 3 necessary ingredients here are: eggs, banana and baking powder. Please use the ripe bananas (go for the ones that already have brown spots), you’ll get best results with this recipe!
These flourless pancakes (无麸质班戟) are just as moist and delicious. There is no flour in this recipe so they have very light texture. The taste and texture of the pancake is similar to the middle of french toast, or crepe. :)

Ingredients.
1.5 Large Ripe Banana.
2 Large Eggs.
1/8 tsp Baking Powder.
Optional:
Vanilla Extract.
Ground Cinnamon. (you could add whatever spices you like)

This makes about 2 small servings (10 - 12 tablespoons mixture). Double or even triple the recipe for the family, just use the ratio of 2 eggs:1.5 bananas. For example, for 4 people, you’d use 8 eggs and 6 bananas.
Break Eggs and Mix It.
a. Crack open 2 eggs in a mixing bowl.

Mash Bananas. a Bit Coarsely.
Mash the banana really well with a fork.
Combine All Together.
a. Add the eggs, the vanilla/cinnamon (optional) to the mashed bananas.

Pour Batter on a Hot Pan.
a. Spray your pan with cooking spray or grease.
b. Pour about 1 to 2 tablespoons of the batter for each mini pancakes over a medium-low heat.

Try to make it small (easier to flip that way). The pancake with just eggs as a binders, so it is a little flimsier than the traditional pancake.

Just Like You'd Cook a Normal Pancake.
a. Cook until the bottom appears set (1 - 2 minutes).
b. Flip with a spatula and cook another minute when the baking powder is activated.

a. Pile up a big stack of mini pancakes on your plate.

c. Drizzle with a little syrup (maple syrup or honey, if you like).
