Healthy Banana Bread (24 Weight Watcher Points Per Loaf)
I enjoy banana bread (especially for breakfast) but not the calories/weight watcher points. This recipe creates a great banana bread that is healthy and only 24 Weight Watcher points for the entire loaf! Other benefits include no sugar along with healthy fats (virgin olive oil, flax seed), fruit, and whole grains (whole wheat flour). The key for the low point value (Weight Watchers) is the use of Vital Wheat Gluten and its high protein content. The Weight Watcher’s algorithm increases the point value for saturated fat and sugar which lowering the point value for protein.

Supplies
10 packets of artificial sweetener
½ cup of flax seed
1 tablespoon of virgin olive oil
2 eggs
2 mashed bananas
1 teaspoon baking powder
1 cup of whole wheat flour
1 cup of Vital Wheat Gluten
.5 teaspoon of salt
.25 cup buttermilk
.25 cup water
few squirts of cooking spray
Combine Ingredients
Place the artificial sweetener, flax seed, oil, eggs, bananas. whole wheat flour, vital wheat gluten, and salt in large mixing blow.
Mix Ingredients
Hand mix the ingredients pouring water and buttermilk (with dissolved baking powder) on the mix as needed.
Prepare Baking Pan and Oven
Pre heat oven to 325 degrees.
Spray baking pan with cooking spray.
Pour mix into the baking pan.
Bake Bread
Cook for 55 minutes at 325 degrees.
The Results
Check at 50 minutes by inserting a toothpick - if it comes out clean then it is done. Turn turn the baking pan over and the bread should come out cleanly.
Slice and Enjoy
I slice the loaf into 8 pieces. Eating 1/8th of a loaf is 3 Weight Watcher points.
