Yes , Lip smacking ice creams can be made with natural flavours of sarasaparilla root and with sappan wood decotion
By nature ,Desi cow's milk is sweeter than Jersey cow's milk and hence the cream is sweeter too.
Desi cows have the special ability to withstand all odd conditions,both bodily and environmentally and hence we too by consuming their milk. Has nutrients equivalent to mother's milk and hence fed to new born too
Here is our ALL NATURAL ice cream with no essence,no extract ,no refined sugar and no packaged processed whipping cream.
Supplies
Requirements
Mango (diced and frozen and pureed) 50 gms
Sarasaparilla Root 2 inches
Sappan Wood piece 2 cm
Native Cow MIlk Cream ! cup
Organic Palm Sugar 11 tsp
Desi butter 30 gm + 1tsp (for greasing the candy plate)
Dry Roasted chopped Nuts (Almond, Pista, Cashew,) 80 gms
China grass(Agar) 4 gms
Water 200 ml
Basil Seeds 1 pinch
Sweet Basil /Stevia Leaves few
Cherries few
Electrical Hand Beater
Mixer Grinder
Earthenware
Root Extract
1.Soak sarasaparilla roots overnight
2.Drain water
3.Add Sappan wood pieces
4.Add 3 tsp Palm sugar
Bring it to boil till it reduces to few spoons
Caramelized Palm Sugar Candy
1.Take Earthen pan
2.Add Desi butter
3.Add 7 tsp palm sugar
4.Bring it to boil in very low flame
5.Stir at times
6.when it boils with big bubbles put off the flame ,as earthen vessel retains heat even after removing from flame
7.Add Nuts ,mix thoroughly
8.Spread it in a greased plate
9.When cooled completely , break it up
10.Reserve few pieces for presenting finally
11.Coarsely grind the remaining candy (For butterscotch ice cream)
Note:
Take Earthen vessel,this prevents burning whiie caramelizing palm sugar
Palm sugar is slightly brown so caramelization needs care to prevent burning
Mango Puree
1.Finely grind frozen mango slices
2.Reserve this for the Mango ice cream
Plating China Grass
1.Soak china grass in water for 15 minutes
2.Bring it to boil
3.Remove from flame
4.Transfer it to the plate for Presentation
5.Garnish with few cherries and Basil seeds
6.Place it in the refrigerator
Cream Preparation
1.Beat the super chilled Desi Cow's cream to stiff peaks.
2.Divide it into 3 portions
Note: 1 hour prior to beating ,place the bowl , beater equipment in the freezer
Sarasaparilla and Sappan Ice Cream
1.Take 1 portion of the beaten cream
2.Add 1 tsp of the above prepared Root extract
3.Mix and Fold up
Flavourful sarasaparilla ice cream is ready
Palm Sugar Butterscotch Ice Cream
1.Take the second portion of the beaten ice cream
2.Mix it with the coarsely powdered caramelaized Palm sugar prepared above
Butterscotch ice cream is ready
Mango Ice Cream
1.Take the third portion of the beaten cream
2.Fold it with 1tsp Palm Sugar and Mango puree
Mango ice Cream is ready now
Note:
Depending on the sweetness of your mango adjust the palm sugar
For a crunchy effect do not beat the cream with palm sugar, just give folds
Presenting the Ice Creams
1.Arrange all the icreams one by one on the plate set with China grass pudding with basil seeds
2.Garnish with cherries,
3.Also with the reserved pieces from the caramelized palm sugar candy
4.Make it sweeter with few leaves of fresh Sweet basil
5.Serve it with chilled sarasaparilla Lemon juice
