Harvest Apple Fritters

I made homemade French fries the other night in our deep fryer and my husband commented that it would be nice to have homemade doughnuts.

We harvested our apples two weeks ago and although I made several pies we still have lots of little apples left over. Theses are hard to work with due to their size. They are smaller than my fist and by the time you peel and core them, there is little apple left. But these are tasty little apples so I thought making apple fritters would be a great idea.

I saw a great recipe here on the Instructable website: Scoochmaroo's Easy Apple Fritter's Recipe (with Pictures).

For this recipe I change a couple factors from the original. I have added Nutmeg and Almond flour. I increased the milk, eggs and apples. I also used Harvest apples from my garden and which I cored and left unpeeled.

Supplies

1 cup of Flour
1/2 cup of Almond Flour
1/4 cup of White Sugar
1 tsp of Cinnamon
1/2 tsp of Nutmeg
1/2 tsp of Kosher Salt
1 1/2 tsp of Baking Powder
2 cups of Harvest Apples - cored and unpeeled
2 Eggs
2/3 cup of Milk

For the topping:
White Sugar
Cinnamon

Vegetable Oil

Dry Ingredients

1. Add the dry ingredients to a medium sized bowl.

2. Mix together using a large wooden spoon or spatula.

Wet Ingredients

1. Add the two eggs into a medium sized bowl.

2. Using a wet measuring cup, pour out 2/3 of milk.

3. Pour milk into the bowl.

4. Using a fork, whisk the eggs and milk together.

Dry and Wet Ingredients = Batter

1. Add the wet ingredients to the dry ingredients.

2. Using either a large wooden spoon or a spatula, stir the ingredients together until it becomes a thick batter.

3. Add 2 cups of Harvest Apples to the batter, mix well.

Time to Heat Up the Oil!

1. I heated the deep fryer to 375* according to the instructions on the front of the machine. Your machine maybe different? Follow your machines instructions unless there are none, then follow mine.

2. I used nearly 3 cups of vegetable oil.

3. If you do not have a fryer you can cook these on the stove.

4. You will need a large heavy stock pot.

5. You will need to pour nearly 3 cups of vegetable oil into the pot.

6. You will need to use a Candy thermometer to measure the temperature.

7. Once the temperature rises to 375* you can begin cooking.

* When using the deep fryer I like to cook outside to prevent the house smelling like a deep fryer.

Batter Becomes Fritters.

1. To make the Apple Fritters, I used a large cookie scoop (1 1/2 TBSP), to ensure they were all the same size.

2. This is important when cooking so they cook for the same duration.

3. Be careful when dropping your fritters into the hot oil so you do not get splash back.

4. It is also very important not to over crowed the fritters while they cook.

5. My fritters took five minutes to cook and I flipped the over at the half way point.

6. Once your fritters are cooked, remove them from the oil and allow to drain on paper towel (kitchen roll).

Time to Sweeten the Deal.

1. You may choose to skip this step however my husband said with the cinnamon sugar, it highlighted the cinnamon in the batter.

2. I did not measure the sugar or cinnamon for this step, I just did it by eye.

3. I placed two fritters at a time and shoock the bowl back and forth until the fritters were coated.

4. Place the warm fritters on a plate. Allow to rest.

Now that you have finished dusting the fritters with the delicious cinnamon sugar mixture and they are still warm; it is time to call your friends and family over for a visit. They will love sharing these warm little bites of joy with you.

Although I planned on keeping these until breakfast, they never made it until then.
