Happy Chicken-stuffed Bell Peppers

I like to keep things simple.

This is actually a modified version of an improv vegeterian recipe I came up with an hour before a guest came over.  Some times recipes call for things you don't have so you just have to make do with what you find.  

If you are wondering why these bell peppers are happy, it is because they were looking too serious so I carved a smile on them! 
You could probably cut shapes out with small cookie cutters as a kids project and actually put the cut outs in the filling.

Unlike a cake recipe, working with chicken requires one to spice to taste. So there are no precise measurements as far as flavoring goes. But if you ask I can give them to you based on an eye-balling estimation.

I recommend that you serve this with a side of whipped cream cheese or sour cream.
