Halwa From Watermelon Rind

Watermelon is one of the best fruit. It gives us the refreshing feel.

But we usually throw off the rind after taking out the juicy pulp. It also has the best nutrients in it.

Watermelon rind is full of vitamins C, B6 & A. You also get a decent amount of potassium and zinc from eating rind.

Supplies

Watermelon rind - 250 grams

Sugar - 1/2 cup

Milk - 1/2 cup (optional)

Semolina - 1 teaspoon

Besan flour - 2 teaspoon

Cardamom - 3 pods

Nuts

Clarified butter - 2 tablespoons

Preparing the Rind

Peel the hard green layer and add the white color rind in a blender.

Blend it well. There should not be any large pieces of the ring.

Roasting

Add 2 tablespoons of clarified butter in a pan.

Add the semolina and besan flour to the clarified butter and roast it for 2 mins.

Adding the Rind

Once the semolina and besan flour gets roasted, Keep the flame at medium and add the blended rind to it. Mix it well.

Remove the skin of the cardamom and take out the seeds from it. Crush the cardamom seeds and add it to the rind.

Adding Sugar and Milk

Once the water content gets completely over add the sugar to it.

After the sugar gets dissolved add the milk. Its optional we are just adding milk to give a rich taste.

Add the nuts and mix well.

Once the halwa starts to separating from the pan turn off the flame.
