HALLOWEEN BREAKFAST BITES

These cute little Halloween Breakfast Bites are such a fun way to start your day during “spooky season”. A half size sheet pan is loaded with breakfast meats, veggies, eggs and cheese. It is baked and Halloween shapes are cut out with cookie cutters.


Supplies

INGREDIENTS:

(No stick cooking spray)

1/2 LB Ground sausage, cooked and crumbled

1 cup Ham, diced

1/2 cup Green bell peppers, diced

1/2 cup Red bell peppers, diced

1/2 cup Fresh baby spinach, chopped small

1 cup Shredded cheddar cheese

6 large eggs

1 teaspoon Dijon mustard

1/2 teaspoon Kosher salt

1/4 teaspoon Coarse black pepper

1/2 cup Half & half


SUPPLIES

Electric mixer

Mixing bowl

Measuring cup for liquids

Measuring cups for vegetables

Knife to chop vegetables

Measuring spoons

Half sheet pan size baking pan (9.5 x 12 x 1inch)

Halloween cookie cutters


Assemble Ingredients, Preheat Oven

Preheat oven to 350 degrees F. Spray a half sheet size pan (mine is 9.5x15x1) with no stick cooking spray.

Arrange the Breakfast Meats and Peppers

  1. Scatter the sausage and ham over the bottom of the pan.

  2. Arrange the peppers and baby spinach over the meats.


Add the Cheese

Sprinkle the cheese over the top of all ingredients

Prepare the Egg Mixture and Pour Over Ingredients

  1. In a large mixing bowl, using an electric mixer, beat together the eggs, mustard, salt, pepper, and half and half. Carefully pour this mixture over the other ingredients.


Bake the Egg, Meat, and Veggie Mixture

  1. Bake for about 17 minutes, until egg mixture is set. Remove from the oven and allow to cool about 10 minutes.


Cut Out the Egg Bites With Halloween Cookie Cutters

Using Halloween cookie cutters, cut out the desired shapes. Place on a party platter or breakfast board to serve. May decorate eggs on the faces with ketchup or hot sauce if desired.
