Guiltfree Homemade Cookies (No Sugar - No Butter)

With COVID-19 in the country, one suddenly has got a lot more time on hands. What better to do than to bake! To prevent that at the end of the quarantine we all start to look like our cookies , I wanted to make a guiltfree oatmeal cookie without butter and added sugar, syrup or honey.

Supplies

Dry ingredients:

110g oatmeal

40g Almond Meal

A handful of raisins (or other dried fruits like cranberries, apricots, ….)

Wet ingredients:

1 egg

1 ripe banana

Herbs:

A pinch of salt

Half a teaspoon Speculaas mix (cinnamon, nutmeg, clove, cardamom, ginger and white pepper)

A couple of drops of vanilla extract.

Crush the ripe banana to a pulp and add the egg.

Whisk the banana and the egg.

It is important that the banana is very ripe, even with a lot of brown spots. A ripe banana is sweeter and makes the cookies more yummy!

Dry Ingredients and Herbs

Add the oatmeal, almond meal and raisins and mix together. If you like it extra sweet, you can add some extra raisins or other dried fruits.

Depending on the size of the wet ingredients, you might need to add a bit more or less dry ingredients.

Finally add the salt, the Speculaas mix and vanilla extract and mix together. I like a slight banana flavor in my cookies, but if you don’t you can add a lot more yummy Speculaas mix.

Make the Cookies

Preheat the oven to 190° Celsius ( =374°Fahrenheit).

Line your baking tray with baking paper.

Scoop a spoon full of dough and roll it in to a ball. Flatten the doughball with your fingers and place it on the baking paper. Bake it 15 minutes in the oven to 190° Celsius.

Eat the Cookies!!!

Let the cookies cool down and enjoy your work!

If done well, the cookies should be crispy on the outside and soft on the inside.

It looks like I managed to ate all the baked cookies and forgot to take a picture of the endresult, so you'll have to do it with a picture of the cookies in the oven.
