Guilt-Free Power Cookies

Amazingly delicious cookies that are a great healthy alternative to store bought granola bars. A great on-the-go substantial snack.

Cookie Dough

Mix up a batch of your favorite chocolate chip cookie dough. Any recipe will work, but the one I used is the one on the bag of toll house chocolate chips. You can even use ready-made cookie dough.

The "Other" Ingredients

This is the fun part. Add you favorite mix of healthy add ins. For a standard batch of cookie dough, here are the quantities used.

1 1/2 c. Oatmeal
1 1/2 c. Coconut (I like freshly grated but any will work)
1 c. Seeds (I used pumpkin and sunflower)
1 c. Nuts, chopped
1/2 c. Dried fruit
1/4 c. Chia seeds

Scoop and Pat

Use an ice cream scoop to make the perfectly even sized cookies. Gently flatten with your fingers.

Bake at 350* for 10 Minutes

Bake in oven for about 10 minutes or until the edges are just slightly browned. Let set on cookie sheet for a minute before moving onto cooling rack. ENJOY!

Cookies are store great in the freezer. To freeze, place in freezer bag immediately after the cookies have cooled.
