Ground Turkey and Spinach Tostados Supreme

Ground Turkey and Spinach Tostados Supreme

Serves 4

Cooking spray

1 lb. ground turkey

1 large clove garlic, pressed or minced

4 cups roughly chopped spinach, any long stems removed

1 3/4 tablespoons taco seasoning, *recipe at bottom of page

4 large (10 inch) whole wheat tortillas

1 medium chopped onion

1 large chopped tomato

2 cups shredded sharp cheddar cheese

Garnish: sour cream, salsa, sliced black olives, sliced jalapenos, guacamole

Lightly spray a 10 inch or larger frying pan with cooking spray. Cook ground turkey over medium heat until cooked through, breaking up turkey into fine crumbles with the side of a large spoon. Add garlic and spinach and cook until spinach is limp. Stir in taco seasoning. Turn off heat. Pre-heat oven to 450 degrees. Line 2 cookie sheets with aluminum foil and lightly coat with cooking spray. (Very lightly!)

Evenly divide turkey mixture among 4 tortillas; top each with 1/2 cup cheddar cheese. Bake about 4 to 5 minutes just until edges of tortillas are browned. Remove from oven. (pictured below, browned edges and melted cheese) Transfer tostados to 4 serving plates. Top with your favorite garnishes.

Taco Seasoning (Makes slightly under 1/4 cup.)

1 tablespoon chili powder

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon crushed red pepper flakes

1/4 teaspoon dried oregano

1/2 teaspoon paprika

1 1/2 teaspoons ground cumin

1/4 teaspoon sea salt

1 teaspoon black pepper

pinch of cayenne

In a small bowl, mix together all ingredients with a wire whisk. Store in an airtight container.
