Grilled Steak With Roasted Corn & Potatoes
Grilling season is upon us! and It’s time to kick back with family
and friends in the backyard right?
Cooking on the grill makes for the best time but, you don't have to wait for the weekend to enjoy a great steak dinner....I’m going to help you create an awesome steak dinner that will show-off your grilling skills.
Quick & easy is best? I say yes…if you are a true steak lover, the less you put on the meat the better. I use only Worcestershire and dales seasoning. That’s it. This isn’t a marinade…you’ll see!
LET'S GET THIS SHOW ON THE ROAD (GRILL)!
Gather Ingredients
This Recipe is for 8 steaks.
8 - Steaks...I used Rib-Eye steaks
8 - Ears of sweet corn
1 - Medium Onion (your choice)
10 - Medium potatoes...normally I use New Potatoes but my wife wanted these Yukon Gold potatoes
1 - Cup Italian Seasoning
1 - Tablespoon
Worcestershire sauce
Whole Mushrooms (yes these are sliced...my wife picked up the wrong ones)
Dales sauce
Minced Garlic
Salt & Pepper to taste
Vegetable Marinade
For this step you'll need a mixing bowl, Italian Dressing, Worcestershire Sauce, Minced Garlic and Old Bay Seasoning.
1 - Cup Italian Dressing
2 - Tablespoons Old Bay Seasoning
2 - Tablespoons Minced Garlic
1 1/2 - Tablespoons Worcestershire Sauce
Place all ingredients in mixing bowl and whisk together. Set aside so the flavors can meld together.
Steak Sauce and Steaks
Okay so this isn't really a steak sauce. I don't believe in hiding a steaks flavor with a rub or a marinade. Just brush your steak with this simple mixture...it will enhance the flavors not hide them.
In a small measuring cup put 1/4 cup Worcestershire sauce and then put in the Dales Seasoning up to the 1/3 cup mark.
Once the sauces are mixed, brush each steak on both sides and place in a pan. Cover the pan with foil and put in the refrigerator until 30 minutes before they go on the grill. This allows the steaks to come up to room temp.
Cuttin Up the Vegetables
This is where the real prep comes into play...IT'S CUTTIN TIME...gather up the corn, potatoes and onions and start having fun. Make sure to wash the corn and potatoes with a veggie brush so you can remove the corn silk and the dirt from the potatoes, make sure to leave the skin on the spuds.
First cut the corn. You will want to cut them into medallions (look at the pics).
Second, you can cut the potatoes any shape you want, just make sure that the pieces are all about the same size. This makes it easier for even cooking.
Cut both ends off the onion, lay flat on the cutting board and cut into eighths and separate all the pieces of the onion.
Place the corn and onions in a large mixing bowl.
Cooking the Potatoes
Once all of the potatoes are cut and put into a holding pan, start layering (no more than 2 layers) them into a microwave safe dish. Put in the microwave and cook for 10 minutes. Check the potatoes with a fork. Don't overcook them because they will finish cooking on the grill. Repeat this step until all of the potatoes are cooked.
Mixing the Veggies
Okay, the veggies are all cut and the potatoes are cooked so what's next? Well it's time to mix all of the veggies together in a large bowl. Pour all of the veggie marinade over the bowl of veggies and mix until all the veggies are well coated. Put the veggies in 1 gallon bags and place into the fridge until needed.
Happy Wife...Happy Life
Now your done prepping...Clean up your mess...because like the title says..."HAPPY WIFE< HAPPY LIFE"
Wrapping Up the Veggies
Before you start this step remove the steaks from the fridge. For this step I use a small sheet pan to make sure none of the juices get on the counter top. Once you get this done your ready for the grill.
It's Grillin' Time
It's finally here...It's GRILLIN' TIME...first you have to preheat your grill on high until the temp hits 400 degrees. Put the foil wrapped veggies on the top wrack and turn the knobs to medium high heat and let the veggies cook for 12 minutes. Make sure to set an alarm.
After your alarm goes off it's time to grill the stakes. I now used the fat trimmings from when I prepped the steaks earlier to grease up my grill grates. You can use oil but I find that prepping with fat trimmings works best.
I like my steak medium rare and I find this to be the bast way to achieve this temp. After all of the steaks are on the grill set a timer for 2 minutes and 45 seconds. Once the alarm goes off rotate the steaks 45 degrees and reset the timer for 2 minutes and 45 seconds again.
Of course the alarm will go off again. This time flip the steaks over and...yup...set a timer for 2 minutes and 45 seconds. Once the alarm goes off rotate the steaks for the last time and just for redundancy, set a timer for 2 minutes and 45 seconds. Once the alarm goes off for the last time, remove the steaks and put them in a clean pan, tent with aluminum foil and let rest for about 5 minutes. Now it's time to EAT!!!
Time to Plate It Up and Eat
Finally it's time to plate up and eat...Add your favorite beverage and this BLT salad (my next Instructable) and you are ready to enjoy all of your work. Bon Appetite or like we say here in Alabama...It;s time to get your GRUB on. Enjoy... :-)
