Grilled Ribeye With Mint Vinaigrette

In this recipe you will be making a very good mint vinaigrette to enjoy with your grilled ribeye. I mean has mint, oil and vinegar ever been a bad combo? No! If you think that that is a great combo, start making this recipe right away and I know you will like it.

Supplies

1/2 cup rice vinegar

15 mint stems/ 1 1/2 cups packed mint

1 cup olive oil

2 tablespoons honey

2 tablespoons dijon mustard

salad spinner

blender

1 bone-in ribeye 1 1/2 inches thick

Cleaning the Mint

For the first step you will be cleaning the mint. To do that you will have to take all of the mint leaves off all the stems and put them in the salad spinner. When you are done with that you will fill up the salad spinner half way with water and then just start to slush around the mint leaves for thirty seconds. Then you will put the lid on the salad spinner and start to spin like your life depends on it for about one minute. Then you will take out all of the leaves and put them in the blender when you are done with that, move on to the next step.

Add All of the Other Ingredients

First you will pour all of the oil in with the mint and then pour all of the vinegar. Then add the honey and the mustard. Then you will put the blender container onto the blender and start to mix the ingredients. First start at a very low speed, then go to level 3 then 6 then 10 until it looks like it is blended. You are done with the sauce.

Grilling the Ribeye

First, put salt and pepper on the meat. Then turn on the grill. When the grill reaches 500 degrees, scrape the grill. Then you will put the meat on the very hot grill and close the grill as fast as possible. Set a timer for three minutes. For the flip, make sure you are careful -- the fire Is going to rise a lot and get a lot hotter because ribeye is such a fatty cut. On the second side do another three minutes. when that is done you will turn off two of the burners and keep another two burners on then put the meat on the side that the burners are off and let it cook for another three minutes (on indirect heat). Remove the steak from the grill and let it rest for 5-10 minutes and you are done with the meat.

For the plating step, slice the meat off the bone and cut it into strips. Drizzle the the sauce on the meat and voila! bon appetit and I hope you enjoy it.
