Recently I was diagnosed as a "Pre-Diabetic" so I have been eating healthier, exercising, more etc. So about once a month I am going to showcase a healthy meal or snack, I am definitely not going to give up on sweets! :) Moderation and portion control is the key, and it just means that my friends will wind up getting more then I usually give them. haha

Ingredients

Ingredients:

  • 3 to 4 ounce pork loin chop (add one per person)
  • 1 cup of brown rice
  • 1 to 1.5 cups of fresh broccoli
  • 1 cup of baby carrots (for peeled large carrots, cut)
  • Olive oil (about 1 Tablespoon)
  • 2 Tablespoons of Dijon Mustard
  • 1 to 2 Tablespoons of Honey
  • 2 to 3 pinches of graded fresh low fat mozzarella cheese (optional)
  • Salt
  • Pepper
  • Garlic Powder
  • Ranch Seasoning (optional) - Find it here

  • Rice cooker with steamer : Find it here
  • George Foreman Grill (you can use the barbecue, or cast iron grill pan) - Find it here

  • Basting brush
  • Spoon

Prepare Rice and Veggies

First let's get our brown rice and veggies cooking. Add the rice to the rice cooker along with the water. Put the steamer on top, and add the veggies. Then just add the lid and turn it on. It is that easy! It will take 15 to 20 minutes.

Prepare the Pork Loin Chop

Now let's take our pork loin chop and prepare it. First let's drizzle on some Olive oil. Winds up being about 1 Tablespoon. But you don't have to be exact. Then shake on some garlic powder, pepper, salt and then turn it over so it gets the seasoning on the other side, you can always add more if you want. I tend to add a little extra in the dish, and then just move it around and it gets plenty of spices on it.

Create Honey Mustard Glaze

Now we take our Dijon mustard and add 1 to 2 Tablespoons of honey. You don't need to be exact. If you want it sweeter add more honey, if you want more of a mustard taste, add less honey.

Grill the Meat

After the rice has been cooking for about 10 minutes let's cook the pork. This way they will both be done at about the same time. You can wait longer if you want, the rice and veggies will sit just fine on the warm setting after they are done cooking. Add the pork to the George Foreman grill, cast iron grill pan, or BBQ grill. It will only take about 5 minutes to cook the pork. It should be nice and firm. And at least have a middle temperature of 145 degrees F. According to the foodsafety.gov website. I never use a meat thermometer to check, but I have made it so many times, I kind of know already. Another way to tell if it is done, is if clear liquid comes out when you cut into it. I don't really like to cut into my meats, because it lets out liquid and flavor.

Glaze and Let It Rest

Now we add our Honey Mustard glaze, and if you like a few pinches of mozzarella cheese. Now let the meat rest for a few minutes.

Dish Out the Veggies

Now it is time to dish out the veggies. I tend to make more then I want to eat, then I can just heat it up the next day to make a quick meal. I also make more rice then I need, and use it for burritos, fried rice, or the same dish the next day.

Season the Veggies

Let's go ahead and season the veggies and rice with salt, pepper, and garlic powder. Then add some ranch popcorn seasoning to the veggies. Gives it an extra kick of flavor.
