Grilled Homemade Almond Flour Meatballs

My 3 yr old son has been begging me all day for meatballs. When dinner time came around I decided to give in to the nagging. I opened the pantry and surveyed the ingredients I had available. Spaghetti, check, spices, check, meat, check, eggs, check, bread crumbs..... Ummm bread crumbs?¿ ok maybe crackers??? Ok what can be used to help be a better binding agent to hold together my meatballs??????
All I had in the pantry were a pack of almonds... So I got an idea, grind up the almonds and make almond flour!!!! Then let's grill the meatballs to give them a smokey flavor!!!!

So I began on a new taste adventure!!!!

Gather the Ingredients

Gather up all the needed (ok what I had laying around) ingredients!

I used:
Onion powder
Garlic salt
Italian seasoning
Salt
Pepper
Ancho pepper
Lowery's seasoning salt
Almonds
Ground beef
Egg

Make the Almond Flour

In my small ninja blender cup I added 1/2 a cup of almonds. I pulsed the blender till all the almonds were crushed. Don't blend it to long or you will skip the flour stage and just make almond butter! (If you do go to long the creamy almond butter is tastes too and just change dinner to almond butter and jelly sandwiches) (oops now I know where I could have gotten bread crumbs...the sandwich bread!!!!)

Mix Together All Dry Ingredients

In a large bowl mix all the dry ingredients, I used a teaspoon of each and an extra dash of salt

Add Remaining Ingredients

Add the meat and egg then mix till combined completely

Make Meatballs

Roll the meat into tiny balls then place them on a baking tray. Then grill at 500 for 10 minutes each side.

Make Sauce and Spaghetti

Get a jar of Ragu and some spaghetti

Add Ragu to a pot with the meatballs and while that is simmering. Make your spaghetti.
Serve quickly to your meatball crazy 3yr old!!!

Hope you enjoyed! The almond flour added a really nice flavor to the meatballs and held them together very well!!!
