Sriracha Honey Grilled Chicken Thighs
Chicken thighs are an easy cut of meat to prepare. They are considered to be dark meat, which in most cases makes them pretty cheap.
They are also extremely juicy and flavorful.
Normally, these can be grilled up and stand up to a taste test all on their own. Tonight, however, I'm going to grill some up and send them over the top with a delicious glaze.

Ingredients
Chicken thighs; These usually come in a pack of six. Roughly 2 lbs
Seasoning for the chicken:
salt, pepper, garlic, onion.... i.e four spice.
For the sauce:
Honey
Sriracha
Yellow Mustard
White Sugar
Prep
Thaw your chicken thighs and apply the salt, pepper, onion, and garlic.
In a small bowl, combine 1 TBSP mustard, 2 TBSP honey, 1.5 TBSP Sriracha, 1 tsp white sugar.
Stir well and set aside.
The white sugar is mainly to cut the acidity of the other ingredients.
Ready your grill at this time. I am using standard charcoal with a few pecan twigs thrown in for flavor.
Grill 'Em and Glaze 'Em
Place you chicken thighs on the grill and grill until nearly done, turning periodically.
Glaze with the sauce and continue to cook until the internal temperature reaches at least 165 degrees Fahrenheit.
It is not recommended to apply the sauce too soon, as the sugar content will burn and make for a fairly unappetizing outer layer.
Eat 'Em
Serve them hot with your choice of sides. As I said, they are delicious. The honey and mustard make a tangy sweetness while the Sriracha imparts a mild heat that makes you know it's there.
