Grilled Chicken Salad Sandwiches
Do you ever have leftover grilled or rotisserie chicken and want to create something different? Are you looking for something easy, innovative, and very delicious? Well, here you go. This tasty version of chicken salad makes enough for six hearty sandwiches, so there’s plenty to share!
Supplies
1-quart saucepan
Ice water
Food processor
Medium bowl
Spoon
Knife
Toaster or toaster oven
Serving plates
Ingredients:
2 eggs
2 medium dill pickles
¼ teaspoon celery seed
½ teaspoon seasoned salt
¾ cup light mayonnaise
2 cups leftover grilled or rotisserie chicken
12 slices white sandwich bread
1-2 medium tomatoes, thinly sliced
1-2 medium ripe avocados, peeled and thinly sliced
Hard-boiled Eggs:
Place eggs in 1-quart saucepan. Cover with water. Bring to a boil over medium high heat and boil for 10 minutes. Drain then immediately immerse eggs into ice water for 10 minutes for easy shell removal. Finely chop eggs in food processor.
Pickles:
Finely chop dill pickles in food processor.
Adding Ingredients:
Place chopped eggs, chopped pickles, celery seed, seasoned salt, and mayonnaise in a medium bowl.
Chicken:
Finely chop chicken and add to bowl.
Combining Ingredients:
Stir to evenly combine. Cover and chill for 1 hour or until serving time.
Bread:
Lightly toast both sides of bread. Cool for 10 minutes.
Assembling Sandwiches:
To assemble, place about ½ cup of chicken salad on six slices of toasted bread. Add two slices of tomato and 3-4 slices of avocado to each as desired. Add a second slice of toasted bread on each.
Serving Sandwiches:
Place each sandwich on a serving plate and cut in half. Garnish as desired. Serve immediately. Serves 6. Enjoy!
Serving Ideas:
We love to add slices of tomato and avocado to our sandwiches, but lettuce, purple onion, and bell pepper are a few other additions we have enjoyed. It just depends on what I have on hand and what our taste buds call for! Crescent rolls or dinner rolls may be used if you want to make finger sandwiches or sliders. This recipe makes about three cups of chicken salad, so it may also be served as a dip with chicken or crackers, especially if you need a quick snack or appetizer for a large group. Be creative!
