Green Poblano Spaghetti

Creamy and spicy green spaghetti with grilled chicken breast. Beginner friendly recipe.

Supplies

Vegetables:

3 poblano peppers

2 serrano peppers (optional)

1/4 white onion

2 garlic cloves

Additional:

A pack of thin sliced chicken breast (& seasoning of choice)

1 box of cream cheese

1 pack of spaghetti or pasta of choice

Approx. 1 tablespoon of chicken bouillon

1 cup half & half

Avocado oil ( or oil of preference)

Roast Peppers

Turn stove on medium high. Wash and place peppers on griddle. Turn when a side is completely roasted.

Thaw Cream Cheese

Remove cream cheese from refrigerator and allow to soften on counter.

Prepare Pot

Fill a pot with water, about 3/4 full. Place pot on burner and turn heat to medium-high. Add splash of avocado oil & 2 pinches of salt.

Cook Spaghetti

Once the water in the pot has reached a roiling boil, place spaghetti into pot. Let cook for approximately 8-10 minutes, or until soft.

Prepping Chicken

Begin seasoning the chicken with spices of choice. Set aside for later.

Sweating Peppers

Remove peppers from griddle once they look like the image above. Place peppers in a sandwich bag and seal it. Allow peppers to rest for approximately 10 minutes.

Drain Spaghetti

Once the spaghetti is fully cooked, remove pot from stovetop and strain water. Set aside for later.

Clean Peppers

Open sandwich bag and remove peppers. Begin peeling the outside skin, it should slide off pretty easily. Proceed to open poblano peppers and remove veins and seeds. May also remove seeds for serrano's but not necessary.

Blend Sauce

Add peppers, garlic cloves, onion, cream cheese block, cup of half & half, and tablespoon of chicken bouillon ( can modify to taste) to a blender. Blend until a cream like consistency is reached.

Combine Sauce & Spaghetti

Pour sauce into pot. Let heat for approximately 5 minutes. Check for taste, add bouillon if necessary. Proceed to add spaghetti into the pot and mix contents. Leave on low heat.

Grill Chicken

Turn heat to medium. Pour a drizzle of avocado oil into a pan. Place chicken in pan. Cook for 8 minutes on each side. Once fully cooked remove from pan.

Serve & Enjoy

Turn burners off & serve! A sprinkle of queso fresco tastes delicious, but is not required.
