Green Mint Pulao

Mint has always been one of my most delicious green on the fresh vegetables list. Its distinct smell always brings in freshness. During most of the potlucks, I did see this on the list and did not miss adding on my plate. I decided to try this recipe myself and it turned out to be marvelous. Truly delicious. I bet you will enjoy too. Let's get started.

Supplies

1. Fresh Mint leaves (a bunch)

2. Fresh cilantro (a bunch)

3. Green chillies (3-4 per your taste)

4. Rice (2 cups)

5. Carrot (2-3)

6. Fresh beans (10-12)

7. Salt

8. Cooking oil 4 tbsp

Grind the Mint Paste

This is the very first step to grind mint leaves, coriander and green chillies as shown in pic 2 above into a fine paste.

Cut the Carrot and Beans

At this stage cut the carrots into small pieces as shown. Similarly cut the beans. See image 1 above.

Cook on the Pot

As this is a one pot challenge, I've used only 1 pot to prepare this one-pot meal recipe. Add oil and when warm add carrot and beans as shown in pic 1. Add salt. Let this cook well until it's almost fully soft and ready. Then, add rice and 3 cups of water. Mix well. Add salt and let it cook for 10-15 minutes. Check when the rice is fully cooked,

There you go. One pot Mint Pulao is ready. Serve hot. Enjoy with family and friends.
