Green Chile Beef Burrito From Left Overs

I have developed a system to plan weekly meals that has saved me time and money. I accomplish this by doing a few things before I buy groceries.I know this sounds crazy but I clean the vegetable drawers in my refrigerator every week or before I go to the store. I make a grocery list; this reduces the amount of food waste because I don't accidentally buy an extra head of lettuce or other produce that spoils quickly.  My menu will include  soups, casseroles, pasta and other meals, that can be made different ways, using small amounts of ingredients. If I am making chinese food; I will plan a soup or pasta dish that compliments the seasonings in the left over meat, for another meal . Sometimes I plan to make extra to reduce cooking time in the kitchen.


This week I had small amounts of left overs that would not be enough to feed three people but by adding a few more ingredients I could make them stretch.I   had left over roast, potatoes, beans, rice, mushroom soup, green onion, and a few flour burritos. I added a few more ingredients and made green chile burritos. My daughter is a vegetarian so I used the combination of the beans and rice to make a complete complete protein and made her a burrito. Follow through and I will show you how to make a delicious meal from leftovers. Let's get started.

Ingredients

This is what you will need:

1 cup or more Pre-cooked roast cubed
1 Small can diced green chiles
1 Crushed garlic clove
4 Flour tortillas I used wheat
1/4 to 1/2  Cup Crema Mexicana or sour cream
1 Cup shredded Cheddar Jack cheese
1 Cup country fried potatoes
1/2 Cup Cream of Mushroom soup
Green onion and black olive for garnish, Optional
Salt and pepper to taste
Makes approximately 4 burritos

You will also need a small rectangle pan.
 

 

Green Chile Sauce

Combine:

Cream of Mushroom soup, Green chile,garlic and Crema Mexicana, or sour cream and season to taste.
 

Spread Sauce on Burrito

Spread the sauce over the top of the burrito.

I put the tortillas in the microwave for a few seconds to warm them so they are pliable.
Spread the sauce over the top.

Layer Meat

Roll Burrito

Get Ready to Bake

Pre-heat the oven to 350 degrees F.

Cover the bottom of the pan with sauce as shown
Lay the burritos seam side down into the pan

Layer Topping

Bake:

Spread remaining sauce over the burritos as shown
Sprinkle a little cheese over the top
Bake for 40 minutes or until the cheese is melted
 


Garnish

Remove from oven:

I added a few potatoes over the top of the burritos the last five minutes of baking to use up the remaining potatoes on a couple of the burritos.
Add a few black olives and diced green onion for garnish.
Roger will have this for lunch tomorrow.
