this beautiful and appetizing pie can be a way to greet the arrival of spring. It 's a simple pie made with few ingredients, as you can see from the picture the main one are the strawberries

Ingredients

The Pastry Ingredients

360 gr Flour + the necessary for the pastry board

100 gr Sugar

a bit of Salt

180gr Butter

4 Yolks Egg

Marzipan Ingredients

100 gr Sugar

100 gr Ground Almonds

1 or 2 Egg Whites

Pie Decoration and Syrup

800 gr Straberries

1 Tablespoon of Lemon Juice

100 gr Sugar

Mix the flour, sugar and salt in a bowl.

Separate egg yolks from egg withes. You'll use yolks for pastry and withes for marzipan

Add the egg yolks and finally the chopped butter. Work a little with your hands. flour the work table and turn the bowl upside down with the dough, continue to work until it forms a ball. transfer it to the bowl and cover with a plastic film and let it rest for about an hour in the fridge.

In the meantime, clean the strawberries. Choose about ten of the more ripe ones, crush them with a fork and put them in a saucepan with lemon juice, sugar, if necessary a tablespoon of water. Bring to the boil and reduce the liquid until it has the consistency of a syrup. (wach the video)

Mix in a bowl the sugar and the ground almonds. Little by little incorporate the 'egg white, until you get a smooth dough but quite consistent. The amount' of egg whites depends on the size of the eggs that you have available.

Fill the pastry syringe with the mixture and decorate the tart (you can choose an ornamental pattern at will). Put it back in the oven at 210 C for 10 minutes. The marzipan should look golden. Let the tart cool on the plate
