Grandma’s Chicken & Rice in 1 Pot

This one-pot dish will become a staple at your house, as it is in mine. So easy, and using ingredients you have in your cupboard to turn a chicken into a delicious meal. Plenty of flavor, but not spicy, so enjoyed by even the finicky members of your family.

Chicken, of course. Buy a whole 3-4 pounder or choose chicken parts (my family likes legs and thighs). Cut into pieces and remove any extra fat and loose skin.

1 large onion, chopped

6-8 ounces mushrooms, sliced

2 tomatoes, chopped

1 green bell pepper, chopped

About 5 celery stalks, chopped

1 ½ cups stock: veggie or chicken

½ cup raw rice

1 tsp salt & ¼ tsp black pepper

Seasonings: 1 Tbs dried parsley, 1 tsp ground thyme, 1 tsp marjoram, ½ tsp celery salt

In a large pot, brown the onions, mushrooms and chicken in some oil or shortening. To get everything browned, it’s fine to do the veggies and the chicken separately and then combine them. Add salt, pepper and rice and cook 5 minutes, stirring often to prevent the rice from sticking. Add and combine the stock, tomatoes, celery, bell pepper, and seasonings. Turn the heat down to simmer, cover and cook 30-40 minutes, adding water or more stock if needed. When ready, the chicken will be tender and the rice should be moist but not soupy. Enjoy!
