Grain Free Peanut Butter Cookies
I found this recipe when I was on the hunt for grain free desserts. When I first saw the recipe for these cookies, my first thought was there's no way that these actually produce good cookies. I decided to try the recipe anyway and I was surprised at the results. These cookies have a slight meringue like consistency and they're quite filling and rich. Plus, they're super easy and quick because all you have to do is mix the ingredients and pop them in the oven!
Ingredients and Preheat Oven
Yields: 12 cookies
- 1 cup sugar
- 1 egg
- 1 cup peanut butter
Preheat your oven to 350°F.
Combine and Cook
Mix together the sugar and egg, add peanut butter, and mix well.
Drop dough in lumps about 1 to 2 teaspoons on a silpat lined baking sheet and flatten slightly. (You can use a cookie scoop, but I just used my mixing fork.) Bake for 8 minutes. (The original recipe said to bake for 8, but in my oven it takes about 12 minutes, though every oven is different.) The cookies will be slightly golden around the edges when done. Let them cool for about 7 minutes and enjoy!
