Gooey Butter Cake Recipe

This was the first time I made and had this classic from St. Louis Missouri because who can't resist a cake that has "Gooey" and "Butter" in the title? I knew I couldn't pass it up. I was pretty impressed by the results and the top layer is absolutely fantastic! It is both smooth and and cream cheesy while at the same time airy and fluffy. It's a hit in my book!

Supplies
Ingredients

For the Crust
- Cooking spray
- 1 (15.25 ounce) package yellow cake mix
- 1/2 cup butter, melted
- 2 eggs
- 1 teaspoon vanilla extract
For the Filling
- 1 (8 ounce) package cream cheese (room temperature)
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups confectioners' sugar (and extra for sprinkling on top)
Melt Butter


As alwyas, begin by preheating your oven to 350 degrees F (175 degrees C). Then grease a 9"-x-13" baking pan with cooking spray.
Melt butter over medium heat or in a microwave.
The Crust Layer




In a large mixing bowl, mix cake mix, melted butter, 2 eggs and 1 teaspoon vanilla with a spoon. Mix until it is all combined.
Add to Baking Pan




Pat into greased baking pan. Because of the consistency, I had bit of a hard time trying to "unstick" this and flatten it out. I found the trick was to use a rubber spatula and spray a bit of cooking spray on it. Then it worked no problem and got nice and smooth :-)
The Filling Layer


Mix cream cheese, 2 eggs, and 1 teaspoon vanilla.
Beat Together.




Beat the mixture with an electric mixer in a large bowl until it is completely smooth.
Add Confectioner's Sugar



Slowly beat in confectioner's sugar (I used a rubber spatula to mix incorporate the sugar and then I use the electric mixer) beat until smooth.
Pour


Pour over cake layer and smooth it out to completely cover the bottom layer.
Bake

Bake for 40 to 45 minutes. For even cooking, I spun the dish around for the last 5 minutes of baking.
Remove and Cool.



Remove from the oven and allow the cake to cool completely. You can also serve warm.
Powder and Slice!


Sprinkle with more powdered sugar and slice the cake!
