Good for You Rainbow Fruit Salad
This delicious and healthy fruit salad makes an eye-popping presentation because every color in the rainbow is visible. Once the pineapple and pudding & pie filling mix is combined, other fruits may be added or substituted as desired; these are just our favorites. Did I say this over-the-rainbow fruit salad is delicious?
Good for You Rainbow Fruit Salad
1 (15.25 oz.) can apricot halves, (orange)
1 (10 oz.) jar maraschino cherries, (red)
1 (1.34 oz.) box sugar free instant French vanilla pudding & pie filling mix (yellow)
1 (20 oz.) can crushed pineapple in juice (yellow)
2 medium ripe peaches, peeled and diced, (orange)
1 large ripe mango, peeled and diced (orange)
1 cup seedless green grapes (green)
1 medium kiwi peeled and diced (green)
1 cup fresh blueberries (blue)
1 seedless purple grapes (violet)
Garnish:
8 purple basil sprigs (indigo)
Canned Apricots and Cherries:
Drain apricot halves then dice. Drain cherries. Set aside
Pudding & Pie Filling Mix and Crushed Pineapple:
In a large bowl, stir together pudding & pie filling mix and undrained pineapple. Set aside for 5 minutes.
Fresh Fruits:
Fold in apricots, cherries, peaches, mango, green grapes, kiwi, blueberries, and purple grapes.
Good for You Rainbow Fruit Salad:
Cover and chill for 1 hour or until serving time.
Ready to Serve:
To serve, spoon into desert dishes and garnish each with a purple basil sprig. Serve immediately. Serves 8.
