Gold Rush Pizza (Smoked Salmon Pizza)

Ingredients:

3 Salmon Steaks

Prepared Pizza Dough

Smoked Mozzarella Cheese

Bag of Mixed Italian Cheeses

Handful of Sunburst Tomatoes- cut into slices

1/4 cup of Red Onion (Julienne-sliced)

1/2 of a cucumber (sliced)

1 cup of heavy cream

3 tbs. butter

3 garlic cloves (chopped)

1/4 cup fresh dill (chopped)

3 tbs. Parmesan Cheese (shaved)

Juice of 1/2 Lemon Squeezed

Salt

Pepper

2 tbs. sugar

Preparing the Sauce

In a small sauce pot over the grill, melt 3 tbs. of butter. Add the chopped garlic. Cook for 2 minutes.

Preparing the Dill Cream Sauce - Part 2

In the pot of butter and garlic, add the lemon juice, shaved parmesan cheese, 1 cup of heavy cream, and 1/2 c. of chopped dill. Let the sauce come to a simmer or slight boil. Remove from heat and set aside.

Seasoning the Salmon and Such

In a small bowl, combine 2 tsp. of sugar and 1 tsp. of salt. Sprinkle and rub the mixture all over the salmon. Place salmon in the refrigerator for 20 minutes. Rinse off the seasoning. Pat dry with a paper towel. Transport to the grill for indirect grilling.

Smoking the Salmon

Set up your charcoal grill for indirect grilling. All of the coals should be one side of the grill and your salmon on the other side of the grill. No coals should be directly under the salmon. Put on the lid. Make sure the grill lid holes are over the salmon. This draws the smoke over the salmon and out of the holes. Provides a nice smoky flavor without being too much or too bitter.

Grill for 20 minutes. Salmon should appear reddish-orange.

Assembling the Pizza

Roll out the prepared crust. Ladle the Dill Sauce onto the Pizza Crust. Add sprinkle Italian Cheese and circles of Mozzarella. Add handfuls of smoked salmon, red onions, and tomatoes. Sprinkle with pepper and salt.

Place the prepared pizza onto the grill. If you don't have a pizza grill pan, just place the crust onto an oiled grill grate. Grill for about 8 -12 minutes- be sure to check along the way so it does not burn.

For the finishing touches, add fresh sliced cucumbers and a splash of hot sauce to juicin' up those tastebuds! Now, EAT!
