This egg casserole is the one to make. It is perfect for a brunch with your family and friends. If you are an egg casserole lover, I highly recommend this recipe for you. When you bite into this casserole you will taste a cheesy and smoky ham casserole. The bacon tops off this recipe and makes it the go to Amish egg casserole.

What You Need!

• 1/2 pound sliced bacon (diced)
• 1/2 medium sweet onion (chopped)
• 3 eggs (lightly beaten)
•2 cups frozen shredded hash brown potatoes(thawed)
• 1 cup shredded cheddar cheese
• 3/4 cups 4% cottage cheese
• 5/8 cups shredded Swiss cheese

Preheat Oven

Preheat oven to 350 degrees.

Cut the Bacon and Onion

Cut up the bacon and onion. Dice the bacon and chop the onion.

Cook the Bacon and Onion

In a large skillet cook the bacon and onion on medium heat until the bacon is crisp. If you need to put the bacon in the microwave start with 30 seconds and add any additional time needed. When it is cooked drain the bacon and onion.

Eggs

Lightly beat the eggs and put them in a large bowl.

Potatoes

Shred the potatoes or just buy shredded hash browns and put them in the large bowl.

Combine All Ingredients

Add the remaining ingredients into the large bowl. (Shredded cheddar cheese, cottage cheese, shredded Swiss cheese, bacon and onions)

Transfer

Next transfer the ingredients to a 9 inch round or square dish

Cook
