Gluten and Dairy Free No-Bake Chocolate Strawberry Tart

In this instructable, myself and my nieces and nephew are going to to show you how to make a no-bake gluten and dairy free chocolate strawberry tart. A few of my nieces and one of my nephews only eat gluten and dairy free foods, so while on vacation for my parent's 50th wedding anniversary and mini-family reunion I decided to make a video with them, and make a treat that they could eat. It is really easy to make, very few ingredients, if we can make it, you can make it, let's get started!

Ingredients/Tools

Ingredients:

  • 24 gluten and dairy free Oreo cookies (or any gluten/dairy free cookie)
  • 4 Tbsp. dairy free butter
  • 12 ounces Gluten and Dairy free chocolate chips or chocolate bars
  • 1 cup of coconut milk creamer
  • Strawberries!

Mash Up Those Cookies

First we need to mash up our cookies into crumbs. We have a few options to do this. Put them in a food processor or we could put them in a zip lock bag and bash them with our hands or rolling pin, however you want to get them into crumbs, it is up to you. I usually use my food processor, but up here at the cabin we didn't have one, so we did it the bag way, plus it is more fun with kids, if you watch the video you will see how much fun it was! haha

Heat, Pour, Stir

Now let's heat up the dairy free butter in the microwave for a few seconds until it melts, then pour that in with our cookie crumbs which we have transferred over to a large bowl. Now stir them until the crumbs are well coated with the butter. It will resemble damp sand.

Pour and Press

Now we take our tart pan and spray it with cooking spray, then pour in our cookie crumbs and press them down until nice and even. You can use your fingers to press them up the sides of the tart pan.

Make That Ganache

Now let's make our ganache. Take your coconut milk creamer and place it in the microwave and heat it up until it gets super hot, just shy of boiling, about a minute and a half, then pour it into the bowl with your dairy-free chocolate chips. Now let it sit undisturbed for about 8 to 10 minutes or so. Then stir it up until well combined. Sometimes you may need to put the whole bowl back in the microwave for about 30 seconds. Now you have an awesome ganache.

Pour, Spread, Place

Now let's pour our ganache into the tart pan with our cookie base. Then spread it out with a cake spatula or the back of your spoon until it is nice and even. Then place in your strawberries. I cut the strawberries in half. You can use whatever fruit you want. Blueberries, raspberries, and blackberries work well, or a combination of all of them! :)

Chill It!

Next all we have to do is chill the tart for 2 hours or more until it sets up. Then if you want put some powdered sugar on the top.
