Red Bean Chocolate Chip Cookies (Gluten-Free/Vegan)

This recipe makes the most moist and delicious gluten free and vegan cookies, high in protein and fiber!

The batter is drop cookie consistence, but you'll find out what I use to make the perfect round shape.

Ingredients

For sweet version:
1 cup Rice Flour
1/2 cup Almond Flour
1/2 cup Chick Pea Flour
1/4 tsp. Baking Soda
1/4 tsp. Baking Powder
1/2 tsp. Ginger Powder
1/2 tsp. Cinnamon
1/2 tsp. Salt

3/4 cup of Agave
1/4 cup Coconut Oil
1 tsp Vanilla Extract
3/4 cup mashed red bean

3/4 cup Chocolate Chips

For less sweet version:
Replace 3/4 cup of agave with the following:

1/3 cup of Agave
1 egg
1/4 cup water
(Add water at last to adjust batter thickness)

Use 1/2 cup Chocolate Chips instead of 3/4 cup

All the other ingredients are the same as sweet version.

Bake at 350F for 10 minutes.
Makes 24 cookies

Mix the Dry Ingredients

Sift and mix well the dry ingredients: Rice Flour, Almond Flour, Chick Pea Flour, Baking Soda, Baking Powder, Ginger Powder, Cinnamon, and Salt.

Mix the Wet Ingredients, Combine the Dry and Wet Ingredients

Melt the coconut oil and combine with remaining wet ingredients.
Add mashed red bean. Mix them well.
Combine the dry and wet portions together and mix well.
Add chocolate chips, blend well.

The batter is drop cookie consistence. You sure can make drop cookie. But I like the perfect round shape and use muffin pan to achieve that.

Brush softened coconut oil on the bottom and side of muffin cups for easy release after baking.
Drop a heap table spoon of batter into each cup.
Bake for 10 minutes or until the edge on the side is golden brown.
Let cookies cool before removing from the cups.
