Gluten Free Soda Bread

I have been eating paleo for the last seven years (yes I know!), and the thing I have been missing the most is definitely bread! I was never the type of person who would go for the white bread. I always loved the most special and original breads I could find.

This recipe is not only gluten free but it is also dairy free and paleo (If you do not use the seeds in the surprise mix). All ingredients could be easily found at any local grocery store.

This recipe is as simple as it can get. Once you will try it you will understand what I am talking about.

So why are you still here??

Ingredients

2 cups almond flour

1/3 cup ground oats (you can ground oats by yourself with a food processor)

1/3 cup "surprises" mix (raisins, cranberries, almonds, walnuts and any type of seeds)

1/4 Tsp salt

1 1/2 Tsp baking soda

1 Tsp GF baking powder

2 eggs

2 Tbsp apple cider vinegar (or lemon juice)

2 Tbsp honey

Preheat oven to 350F/175C.

Mix all Dry ingredients (almond flour, oats, surprises mix, salt, baking soda, baking powder) in a medium mixing bowl until well blended.

In a different Mixing bowl, Mix all wet ingredients (eggs, apple cider vinegar, honey) until well blended and a bit bubbly.

Add the wet mixture into the dry mixture and blend together with a Tbsp. until well blended.

Place your dough onto a baking sheet lined with a parchment paper.

Shape your dough into a round shape. Make sure the height of your bread is no more than 4cm\ 1.5inch.

Use a sharp knife to cut an X into the top of the bread. And spread some toppings (optional).

Bake in preheated oven on 175C/350F for 20 minutes.

Can you smell that already?? I know!

But wait, cool for one hour!
