Gluten-Free Ramen Cheater

Almost everyone at some time has experienced the quick, and easy 3 min Top Ramen in a package. Such an easy dish with so many possibilities. I found out that I had to give up gluten for good this spring and could no longer rush through my lunch with a pack of Ramen noodles. But I quickly found an alternative that is almost as fast. It takes just 5 minutes! I make these ahead of time and keep them in separate ziplock bags so I can pop them open in a hurry. Lets get going!

Ingredients

You will need:
rice noodles (only $1.89!)
gluten free powdered broth of your favorite flavor (chicken here)
a bowl
water
microwave
(for the fast method)

-Grab some noodles ( I meet my thumb and pointer finger to form a "O" for an estimated amount. You can get about 6-7 of this measure out of one bag of rice noodles)

- put the noodles in a bowl

- add your water ( I use two cups for this amount of noodles)

-add your broth (follow the instructions on your broth package, here I used 4 tsp of the powdered broth per two cups of water. The cube broth is 1 cube per cup of water, or for this amount 2 cubes for two cups of water)

-Stir

- Microwave on high for 5 minutes

-your gluten free cheater top ramen noodles will be HOT! but enjoy when your gfctp noodles cool down!

To make this easier for next time, I gather my noodles and broth in a ziplock bag to take to work, or just to open and throw in the microwave with two cups of water (in a bowl of course!). They almost taste like the yummy wheaty ramen we have all come to know and love, but without that naughty gluten!

P.S. This can also be made on the stove. Just boil your water, add your noodles and broth and boil for about 4 minutes.
