Gluten Free Crepes

Only 2 ingredients for these crepes, no flour nor sugar!
Just banana and egg :)

The banana will give all the sweet taste so you don't really need any additional sugar.

You can use this recipe to make pancakes too so it's easily adjustable.
Who cares if you are on a diet, this recipe is really low fat so anybody can eat it! :D

Ingredients

  • 1 banana
  • 1 egg
  • a little bit of butter

The Banana

The main ingredient of this recipe is the banana.

Let's start peeling the banana.
Cut it in smaller pieces and put it in a container.
What you have to do now is mashing the banana as much as possible. I used a mixer to make sure that there were no pieces left. You can do this using a fork too, but it's going to be a little harder.

Mix Everything

Put the egg in a little bowl and scramble it for a while.
Now add the banana mash and mix everything together.

The mixture for your crepes is ready!

If you think that it's not liquid enough, you can add a little bit of milk to it.


Cook Your Crepes!

Prepare a pan (I used a special pan for crepes) spreading a little bit of butter on the surface, so that the crepes won't stick to the pan later.

Now turn on the stove and pour some mixture in the pan using a big ladle.
Immediately move the pan in a circular way to make the liquid lay on the whole pan's surface and give it a pretty round shape.
You must do this immediately otherwise you won't be able to move the mixture anymore.

When you notice that the borders of your crepe start to be solid enough to tear away from the pan, turn the crepe on the other side and let it cook until it's ready (check it from time to time, it takes very little time).

Be careful when you turn the crepe because it will easily break! :)

Continue this way with the rest of the mixture. I made about 2 crepes with this dose.

Fill Them!

Your crepes are ready!

You can fill them with whatever you like now.
I spread some jam on mine :)

Fold the crepe in 4 and dust with some powdered sugar if you like...
