Gluten Free Coconut Cookies

This is a gluten free chewy coconut cookie. The recipe provides instructions for using gluten free AP flour or a GF baking flour mix.

1/2 cup softened unsalted butter

1/2 cup brown sugar

1/2 cup white sugar

1 egg

1 cup GF AP Flour

1/2 tsp xanthan gum

1/2 tsp baking soda

1/2 tsp baking powder

1 tsp salt

1 tsp vanilla extract

1 1/2 cups shredded or flaked coconut

*If you get Bob's Red Mill Gluten Free 1-to-1 Baking Flour, then you can skip the xanthan gum (which can be hard to find and expensive).

In one bowl, mix the butter with the sugars, vanilla, and egg. In a second bowl mix all of the dry ingredients except for the coconut. Combine the dry ingredients with the wet bowl and mix well. Add coconut last.

Bake at 375 for 10-12 minutes or until the tops are a light-to-medium brown. These are supposed to be somewhat chewy cookies, so don't over-bake. Remove from oven and allow to cool on wire rack.
