Gluten Free Chocolate Peanut Butter Truffles
I brought out the good china for these babies. These truffles are filled with a rich peanut butter filling, coated in dark chocolate, and sprinkled with roasted chopped peanuts. Who needs gluten when these sweet treats are available?
Ingredients:
Filling:
1/2 cup coconut flour
1/2 cup peanut butter flour
1/2 cup light brown sugar
1/2 teaspoon salt
4 tablespoons unsalted butter at room temperature
1/4 cup peanut butter
1/4 cup maple syrup
Coating:
4 ounces dark chocolate
1/2 teaspoon vegetable oil
1/2 cup dry roasted salted peanuts chopped

In the bowl of a stand mixer, add 1/2 cup coconut flour. I’m kind of proud of that leveled measuring cup.
Add 1/2 cup peanut butter powder.
Add 1/2 cup light brown sugar.
Add 1/2 teaspoon salt.
Add 1/4 cup creamy peanut butter. Sometimes you just want some peanut butter to go with your peanut butter powder.
Add 1/4 cup maple syrup because why not? It’s good!
Add 4 tablespoons of unsalted butter at room temperature. Go ahead and run your mixer on low speed until it has been mixed and ingredients have been incorporated.
Grab truffle filling in tablespoon sized amounts and roll into balls. Place on a baking pan covered in parchment paper. There may or may not be some missing from the picture. Nom nom.
Add 4 ounces of chopped dark chocolate into a small microwaveable bowl. Microwave in thirty seconds increments until melted. Stir after every 30 seconds. This took me a total of 90 seconds on high power.

Add 1/2 teaspoon of vegetable oil to melted chocolate. Stir.
Dip each truffle in chocolate and drain off excess chocolate. Place back on parchment paper.

Sprinkle chopped peanuts on dipped truffles before chocolate solidifies. When all of the truffles have been garnished, place pan in the refrigerator for twenty minutes.
Go ahead and get your fancy china out too, you know the ones. Get the ones that you only use when the inlaws come over. You also might want your stretchy pants because these are addictive! Remember to breathe between bites. Enjoy yourself! You know you’re worth it!
