Gluten Free Cauliflower Pizza
Gluten-free pizza made from cauliflower
Ingredients
1 head of cauliflower (mediumish)
1 egg
1/4 cup parmesan cheese
1/4 cup mozzarella cheese (or italian blend)
1/2 onion
2-3 cloves garlic
5 fresh basil leaves (or 1/4 teaspoon dried basil)
1 sprig oregano (or 1/4 teaspoon dried oregano)
1/4 teaspoon salt
1/4 teaspoon crushed red pepper (optional)
olive oil
parchment paper or pizza pan
pizza stone (optional)
pizza sauce
mozzarella cheese for topping
toppings of your choice

Prepare Your Ingredients
Remove the leaves from the cauliflower
chop the onions roughly
chop the cauliflower roughly

Make Cauliflower Snow
Put cauliflower, garlic and onion in food processor and process until its very fine (snow)
(with the onion there is more liquid so it was more like a puree, without the onion it's more snow-like

Nuke It
Put your cauliflower and onion into a microwave safe bowl and cover it.
Microwave for 5-8 minutes until it is tender and the center is hot.
Place on a towel and let it cool.

Squeeze It...and I Mean Really Squeeze It
Wrap the towel around the cooled cauliflower and squeeze it until you can't squeeze it anymore.
Squeeze some more.
Then some more.
Just a little more for good luck.
Seriously, there is more liquid in it than you would think, you want it as dry as possible otherwise the crust won't stick together and won't get crispy.
Mine was almost half it's size when i was done squeezing.

Preheat the Oven & Pizza Stone
Preheat oven to 450
If you have a pizza stone, preheat that too

Mix It Up
Add your herbs, pepper flakes, salt, cheeses, eggs and cauliflower to a bowl.
Mix it together (using hands to mix is totally fine)
When it's combined, gey ready to roll

Roll It Out
Place a large piece of parchment paper down and put some olive oil on it (or whatever oil you want)
Rub the olive oil on the paper and proceed to roll it out (not too thick)
I used anothet sheet of parchment on top so it didn't stick to the roller, but you can also just press it out with your hands

Bake It Up Baby
Put your rolled crust in the oven for 8 minutes or so, until it is crispy and brown
Top It and Bake It
Place a layer of sauce and cheese then whatever toppings you would like
Bake for another 5 mins or until the cheese is golden brown.

Enjoy Your Creation
Let it cool for a few minutes then cut it and enjoy. Don't tell your kiddos/family/friends it's made with veggies and see if they can tell :)
