Ginger-Orange Chipotle Chicken

The blood orange is about the same size as an average regular orange, though it can be smaller or larger. It is a type of orange with an almost-blood-colored flesh.
The blood orange is even more nutrient dense than a regular orange, because of its red hue. A compound found in the blood orange called anthocyanin, is an antioxidant pigment common in most flowers and fruit, but uncommon in citrus fruits, which makes the blood orange a unique piece of fruit.
An Italian Blood Orange Soda
Blood oranges have been used to make marmalade, and the zest can also be used for baking. A very popular Sicilian salad that is prepared in the winter months, is made with sliced blood oranges, sliced fennel, and olive oil. The oranges have also been used to create Italian sodas among other things.
Preparing Ginger-Orange Chipotle Chicken

Here is what you will need to prepare: Ginger-Orange Chipotle Chicken.
3/4 cup ginger-orange marmalade
1 1/2 tablespoons adobo sauce (canned chipotles)
1 1/2 tablespoons cider vinegar
1/8 teaspoon ground cloves
1 large sweet potato, cut into wedges
2 small blood oranges, quartered
2 tablespoons avocado oil
4 large chicken drumsticks
1/3 cup mixed almond and coconut flour
Preheat oven to 475 degrees
Making the Sauce

In your favorite medium mixing bowl, mix first 4 ingredients together, and reserve 1/3 cup of the sauce.
Again those ingredients are:
3/4 cup ginger-orange marmalade
1 1/2 tablespoons adobo sauce (canned chipotles)
1 1/2 tablespoons cider vinegar
1/8 teaspoon ground cloves
Breading the Legs

Toss the chicken legs in the almond - coconut flour mixture. Set aside on cutting board.
Preparing to Bake

Now in your favorite large mixing bowl, add the avocado oil, prepared sweet potato and blood oranges, and toss to coat with oil.
On a foil-lined baking sheet, arrange the breaded chicken legs, orange quarters and sweet potato wedges.
Roast in your heated oven for 15 minutes, then turn chicken and brush again with the sauce. Continue roasting until juices run clear from the chicken legs when pierced with a knife, about 10 minutes.
Plate and Serve

Plate and serve. There really is no need to prepare and side dish, as the roasted platter has blood oranges and sweet potatoes to enjoy with the meat.
