Giant Twix Bars!
The holidays may be over but don't be sad just yet; these chocolate carmel-y bars are a delicious treat, which unlike its original counterpart, are not finished after just two bites! These are a wonderful gift or can be enjoyed by just you and your family.
This Twix measured out to about 6 pounds!!
Below is a how-to to make these in your own kitchen, believe it or not, these chocolate bars are not as hard to make as they look!
First, Assessing the Order
There are three components to building this giant Twix bar:
- Making the box that gives these ingredients it's shape
- Making the biscuit layer
- Making the caramel (or you can use pre-made, nobody has to know!)
- Coating the bars with chocolate
Building Your Box
The dimensions to the box are 37 cm long, 7 cm wide and 6 cm deep.
To make this is easy as possible, simply cut out a rectangle 49 cm by 19 cm as in the picture. Before you begin, remember, whatever you do, you're making two of!
Cut out 6 by 6 cm squares from each corner.
Now, fold the two long sides up, and fold in its corners. Tape the folds shut.
To create the top of a Twix bar's roundness, place a piece of paper inside, letting it sag inward. Staple or tape it's sides to keep it from moving.
Now to keep everything as clean as possible, put a piece of parchment paper inside and staple it to the sides of the box.
You are now finished with your boxes!!
On to the Biscuits
To give you an idea of what's happening, here's what you'll be making: one batter that will lend itself to 4 biscuits, of which two will go into each Twix box.
Here's the recipe for these bars:
- 3 sticks (1 1/2 cups) butter
- 1 cup sugar
- 6 egg yolks
- 3 3/4 cups flour
- 1 cup of skim milk powder
- 1/4 cup plus water
- 1/4 tsp salt
- Beat butter and sugar together, then add salt and yolks and mix.
- Add skim milk powder and water and mix until incorporated.
- Add flour and mix slowly until a thick dough has formed.
- Roll it out to get flour rectangles. Bake them, cut into 4 rectangles. Place in oven turned off.
- Bake at 300 F for around 45 minutes, give or take 10 minutes or so. You'll know the biscuits are finished when the have browned lightly and seem evenly baked.
Once the biscuits are baked completely, take a ruler or even your box, and use that as a guide to cut the tray of biscuit into 4 pieces that will fit into your pan.
To get straight cuts, I wrapped a long tin foil box in seran wrap and used that as a ruler to place straight onto the warm tray.
In order to cut without any pieces breaking- place the knife perpendicular to the flat surface and cut slowly and vertically.
Now, place the tray back into the oven turned off for 20 minutes or so to dry them.
Now, the Caramel!
With the caramel you have two options. You can either make your own, with a recipe provided to give you authentically Twix-like caramel, or if you don't have the time, melt some storbought caramel down over the stove and use that.
If you opt to make you own, here is the recipe:
- 1 cup glucose syrup or light corn syrup
- 1 cup cream, 35% fat
- 1/2 cup full cream milk
- 1 1/2 cups sugar
- Mix ingredients in pot until sugar dissolves over the stove.
- Heat your mixture until it begins to bubble.
- Keep stirring to ensure nothing burns and once it's at 240 F it's ready, or use the spoon test to determine if it's ready. Dip a spoon into the caramel, place some onto a clean counter/surface, if spoon lifts from counter and its thick and stringy, setting a little, it’s ready.
No matter what you choose (I melted down three bags of caramel squares), the important thing is to assemble your Twix bars while the caramel is as hot as possible.
Assembly!
It's time to assemble!
Begin by spooning some caramel into the bottom of your box lined with parchment. Immediately place a biscuit over the caramel so they set together.
Repeat this step for your other box.
Spread a little bit of caramel over your your biscuit and immediately place the next biscuit on top. Do this once more for your other box.
Now for the best part- chocolate!
To start you'll need about 21 oz of milk chocolate that you will temper. Tempering is the process of slowly heating and cooling chocolate to achieve stable crystal structure within the chocolate. Why? Tempering chocolate makes it shiny and firm while still malleable. So how do you do that?
Pour your chocolate chips into a glass bowl.
Now, heat a pot with very little water on low.
Place the glass of chocolate over the pot and stir until the chocolate become smooth and homogenous.
Take the bowl off the pot, and let it cool slightly. To temper, Scrape in the edges of the bowl into the middle and mix it in. Repeat this process until the melted chocolate has cooled considerably.
Now spoon some melted chocolate on the tops of each box and smooth it over.
Tap the ends of the box to ensure the chocolate falls into the edges of the box and let rest to set.
Just a reminder- you will need a little over half of the chocolate for the next step so don't throw any out yet!
Chocolate Time!
Once the chocolate has set (I left the boxes out overnight to set), gently break apart the boxes to remove the bars.
Place the bars on top of a wire rack with parchment paper underneath.
Reheat the rest of the chocolate using the same process as before (over a heated pot with some water).
Now its time to smother the bars with as much chocolate as you wish!
I used a spoon to smooth over the sides of the bar,. To give the Twix its signature look, use a toothpick dipped in chocolate to create diagonal lines over the tops of the bars!
Finally... Wrapping the Bars!
There are two steps to wrapping the bars to match it's smaller counterpart:
- Creating a sturdy base
- Wrap using gold wrapping paper
First, cut out a piece of cardboard that will fit two Twix bars as shown above. Next, wrap it in white paper and cover it in seran wrap so it's clean.
To wrap it, cut a piece of gold wrapping paper out. Place the Twix bars upside down onto the paper. Put the base/board face down on the bars and fold and tap the wrapping paper shut.
Now gently flip the bars right side up and fold in the edges as shown in the pictures. Trim the edges and tape it shut. If the wrapping paper allows, also crimp the two ends!
To get the logo, just search the logo online, copy and paste it onto a document, expand its size to be large and print it out. Then cut it out and glue it onto the top of your bars. You are now finished with your chocolate bar!!
It's time to unwrap and enjoy these massive Twix bars!
