Garlic Roasted Carrots

These carrots are so easy to make and very delicious. Note: My pictures look slightly different than what you'll come out with as I like more parsley, but this recipe is easy to adjust as desired.

Although I'll list the ingredients, but you won't need the exact amount. Here are the ingredients you'll need:

  • 1.5 pounds of baby carrots
  • 1 Tablespoon of extra-virgin olive oil
  • 1/4 teaspoon of salt
  • 2 garlic cloves, minced
  • 2 Tablespoons loosely packed parsley, chopped
  • 4 Tablespoons of butter, salted

Preheat Oven and Prepare Cookware

Preheat the oven to 425°F.

Line a baking sheet with aluminum foil.

Prepare the Carrots

In a mixing bowl, put the carrots and the olive oil. Toss the carrots until the oil is evenly coated. Sprinkle in some salt and until the salt is spread evenly. Place the carrots on the covered baking sheet in an even layer and place in the oven for 25-30 minutes, rolling them around twice during roasting.

Preparing the Garlic Butter

While the carrots are roasting, melt the butter in a small saucepan over low heat. Add the minced garlic and the parsley. Cook about one minute. Remove the pan from heat.

Mix It All Together

In a mixing bowl, toss the carrots and butter until the butter is evenly coating the carrots. Add salt to taste and enjoy.
