Garlic Mushroom Gnocchi

Merry belated Christmas! Christmas baking is done for this year, but let's not get ahead of ourselves - New Year's is just a few days away, and more cooking must be done. An amazingly cheap and fast dinner that the whole family can enjoy is Gnocchi, in all of it's related recipes.

This particular Garlic Mushroom Gnocchi is extremely time-and-cost efficient, healthy, and full of flavor. Gnocchi takes only 3 minutes to boil, and don't cook it too long otherwise it will get chewy and harder to consume.
Make sure your water is boiling before dumping in your gnocchi, and restrict time in the hot water to around 3 minutes, draining in a colander as soon as time is up. You'll want your pan of hot oil ready to sear the gnocchi in as soon as it is drained.
In this recipe the 'oil' that you're searing the gnocchi in is actually bacon grease, since you'll be using the pan beforehand to cook some bacon bits in. No extra oil needed.
Ingredients
Ingredients: (Serves 4)
1 (16 oz) package gnocchi
¼ cup bacon, cooked & minced
2 tablespoons olive oil
6 tablespoons butter
8 oz chopped mushrooms
3 cloves garlic, minced
⅔ cup chicken broth
1 tablespoon flour
Salt, to taste
Boil It

Boil gnocchi according to package instructions. (it should take only 3 minutes) Drain gnocchi.
Bacon It

Heat bacon over medium heat. Add cooked gnocchi, and fry until the sides of the gnocchi are golden. Set to the side.
Mushrooms & Garlic

Add garlic and chopped mushrooms to the empty skillet. Cook until fragrant, about 5 minutes.
Wet Ingredients & Flour

Add chicken broth, flour, and butter, and bring boil, then simmer until slightly reduced, about 5 minutes.
Add in the Gnocchi and Serve and Enjoy!

Add in the gnocchi
Serve warm, with an optional garnish of parsley
