Game Day Spam Spread

I always keep a can or two of Spam in my pantry, as I know that I can come up with an excellent appetizer on a moments notice.  Years ago we made ham salad from left over ham, but discovered that Spam is perfect for a spread.  I shaped it into a football for a tailgate party one weekend, and a Game Day Spread was born.  

Gather Ingredients.

Hormel Spam
Yellow Onions
Pickle Relish
Hard boiled eggs
Cajun Seasoning
Pepper Sauce
Ground cloves
Liquid Smoke
Mayonnaise
Green Pepper
Frito Scoops

Chop Onions

Place a half of a cut up yellow onion in a food processor and give them a whirl.

Chop the Spam

Cut Spam  (or as in these picsI show ham) into cubes and add to food processor and pulse away to your desired texture.  Remove the Spam and onion mixture to a mixing bowl and set aside.

Chop Eggs

Chop up four hard boiled eggs by hand.  A processor can turn them to paste.  Add the chopped eggs to the mixing bowl.

Bring It All Together

Add at least 1/4 cup sweet pickle relish, a tsp or so of dry mustard powder, Cajun seasoning, pepper sauce, a teaspoon or two of Liquid Smoke, a dash of ground cloves, and mayonnaise, mixing to the consistency you desire.

Make a Platform

Now make a platform for the Spam spread by taking a piece of quarter inch foam core cut to a desired shape, here I am making a football shaped spread for game day.  Place a couple of double faced foam tape pieces on the underside of the platform to hold it in place on a silver tray.  Shape the Spam salad into a football shape, making letters and laces with cut up peppers, carrot pieces and celery, etc..    Pile Frito Scoops around the display and enjoy.
