GHANAIAN JOLLOF RICE

Jollof, originally from the Wolof tribe of Senegal, is basically a popular West African rice dish prepared with tomato sauce. This scrumptious delicacy is often served at parties and on festive occasions. In this instructable, I'm going to show you how it is prepared the Ghanaian way.

Supplies

The ingredients you'll need are as follows;
2 large chopped onions
5 large diced tomatoes
2 Scotch bonnets
4 cloves of garlic
Ginger
Tomato paste
Salt
Curry powder
Chilli powder
2 seasoning cube tablet
3 bay leaves
2½ cups of basmati rice
2-3 cups of water
Cooking oil

*Optional
100g meat(beef)
Vegetables : carrot, bell pepper and spring onions. (you can also add peas)

Preparing the Meat.

To start with make sure to wash your hands as well as the meat. Cut the meat in cubes and season with spices. Steam the meat until tender in liquid broth.(I made this using 1 scotch bonnet, a little ginger, 1 onion and 4 cloves of garlic) Then fry it in hot oil till lightly brown.

Making the Sauce

To prepare the sauce blend the onions, tomatoes and pepper. Add some ginger and garlic if you like. Pour enough oil in a saucepan just to cover the bottom and place it over moderate heat. Once the oil is hot, add sliced onions and fry. Pour in the tomato paste and mix. Allow the tomato paste to cook for a while before adding the tomato puree or mixture. Stir in curry powder, seasoning cubes, a little chilli powder(if necessary), bay leaves, salt to taste and the fried meat. Cook for about 20-30 minutes whiles stirring occasionally.

Adding the Rice and Vegetables

After cooking the sauce add the water, rinsed rice and chopped vegetables(carrot and sweet bell pepper) to the stew and stir. Then cover the saucepan with Aluminium foil and place a lid on top. This is to trap steam from escaping so there'll be no need to add any water to the rice again. Leave it to cook for 30 minutes until the liquid is absorbed.

Serving and Garnishing

Garnish with spring onions and mix.
You can serve with salad and sauce. Enjoy your meal!
