Funfetti Burger Cake

The funfetti burger cake is a great way to add some extra protein to any meat-lover's birthday. The bulk of this cake is based on your standard meatloaf recipe, but with a twist! This cake is extra festive thanks to the addition of rainbow colored sprinkles.

Ingredients for the cake:

  • 1 1/2 Lb ground beef
  • 1 large onion minced
  • 1 egg
  • 1 cup milk
  • 1 cup breadcrumbs
  • 1/3 cup ketchup
  • salt to taste
  • multicolored sprinkles

Ingredients for the filling:

  • 9 oz relish
  • green and yellow food coloring
  • 1 pack frozen french fries
  • 1 pack frozen sweet potato fries
  • 1 12 oz tub of cream cheese
  • 1 8 oz pack of sharp cheddar cheese

Make Some Meatloaf

Preheat the oven to 350 degrees F.

Mince an Onion

Finely chop one whole onion.

Milk

Measure 1 cup of milk and add it to the onions.

Add Some Breadcrumbs

Add 1 to 1 1/2 cups of breadcrumbs to the mixture.

Egg

Add 1-3 eggs to the mixture. I recommend more eggs to keep the "cake" from crumbling.

Ketchup

Measure and add 1/3 cup ketchup.

Salt

Add a dash of salt to taste.

The Meat

Add 1 1/2 pounds ground beef.

To make this burger cake truly festive, add half a bottle of sprinkles and stir thoroughly.

Bake the Fun-fetti Meatloaf

Spread the mixture into a 5"x9" loaf pan and bake for 1 hour. The top of the meatloaf should be firm and very colorful.

Bake the French Fries

Preheat the oven to 415 degrees F. Spread the frozen french fries and sweet potatoes onto a baking sheet and place in the oven for 20 minutes. Coarsely chop the fries after baking.

I was lucky to have two different ovens while making this cake. If you have a single oven, add the fries in with your loaf pan at 350 degrees F for 1/2 hour, or until they begin to crisp.

Prepare the Relish

Pour the relish into a bowl with two to three drops of green and yellow food coloring. Mix until the relish is bright green.

Prepare the Cheese Icing

Combine the cream cream and sharp cheddar cheese in a bowl. The mixture looks like your great aunt's jello and mayo salad, but trust me, it tastes like cheesy goodness.

Cut the Cake Layers

Press the lip of a medium-sized bowl into the funfetti meatloaf to cut out a circular round. Use a spatula to remove it from the loaf pan.

Begin Layering

Top the first meaty layer with the cheese spread, relish, and fries. Repeat as many times as you like, depending on how tall you want your cake. Make sure you apply the fillings evenly over the burgers, or the cake edges will sag and collapse.

Add the Finishing Touches and Enjoy

Garnish the funfetti burger cake with extra fries. Give the cake a little "je ne sais quoi" by drizzling ketchup and mustard around the plate.

I can attest that this cake is delicious! It tastes like a combination of childhood meatloaf memories and In-N-Out Burger (for all the west-coasters out there) with a touch of sweetness from the sprinkles. Enjoy!
