Full-Cheese Cannoli

A new era for finger-food has arrived! Full cheese finger-food is always plain and I was so Feta up! So here there is a revisit of the Cannoli, entirely and completely made out of cheese! It can be a Brie-lliant idea for your parties and your friends now cannot say "no thanks I am Gouda" anymore when they see these little treats!

The recipe is really fast and simple, and really few ingredients are needed... Parmesan and soft cheese!

Supplies

For 6 cannoli:

  • 100 gr of Parmesan cheese
  • 150 gr of spreadable cheese (you can choose your preferred flavor, I used garlic and herbs cheese!)
  • Baking paper
  • Aluminum foil
  • A grater
  • A piping bag

Pre-preparation

Prepare the aluminum tubes by folding 3 times a sheet of aluminum foil. Then start rolling the foil to form the tubes.

Cut squares out of the baking paper (mine were 11x11 cm)

Cut also 6 pieces of aluminum foil which we will use to wrap our cannoli afterward.

Grate and Cook the Parmesan

Grate the parmesan using the grater (you can even buy already grated parmesan!). Place a non-stick pan on the hob at medium heat. The pan needs to be warm, although keep the flame at medium otherwise you are going to burn the Parmesan.

Place a piece of baking paper on the pan and spread a tablespoon full of Parmesan.

Shape the Cannoli

Take the cheese out of the pan and place the aluminum tube on top. WARNING it will be hot!

Carefully start by rolling the first part of the melted cheese on the tube. Then, gently, cut the first part of the baking paper to uncover some of the cheese. The cheese will solidify really fast so by cutting a piece of the baking paper you will not compromise the cannoli. Continue rolling the cheese but this time make sure that the now uncovered part is rolled on the cheese itself and the baking paper is out of the way. In this way, one side of the cheese will attach to the other end. Continue by rolling the cheese on itself and use the baking paper to secure the rolled cannoli.

Because the baking paper is now detached from the cheese, use the aluminum foil, that we cut at the beginning, to roll the cannoli in a candy shape.

Place it aside to cool down.

Little note: be careful not to tighten the aluminum foil too much, otherwise the parmesan will stick very well on the aluminum foil and it will be very difficult to take the tube out.

Prepare the Filling

While waiting for the cannoli to cool down let`s prepare the filling.

The spreadable cheese is always a bit thick when you buy, therefore we need to make it softer. Place the spreadable cheese on a plate and using a spoon mix it continuously for a couple of minutes.

Fill the Cannoli

Fill the pastry bag and start opening your cannoli. Because the parmesan will stick a little around the aluminum foil, press the tube on different sides as shown in the video. Then push the tube out carefully.

Fill the cannoli, from both sides, using the pastry bag.

Present them as you wish! I like them in a flower-type presentation, but the presentation is completely up to you!
