Fruit Scones

This is a family favourite , with loads of options.
The scones can be plain, raisin, sultana, chopped dry fruit, cinnamon, mixed spice or savoury cheese scones.
Serve them with jam, clotted cream or butter.

The Mix

The recipe requires.
1 cup or 8oz self raising flour.
1 level TSP baking powder.
1 1/2 oz chilled cubed butter.
1 1/2 TBSP caster sugar.
Pinch of salt.
1/2 cup or 5 fl oz of milk.
I have added 1 3/4 oz of raisins for this recipe.

Heat your oven to 220 0c / 425 F / gas mark 7

Sift the flour and baking powder into a bowl'
rub the butter into the flour, try to create a light bread crumb mixture.
DON'T over work the flour.
Now add the sugar and a pinch of salt.
slowly add the milk, mix with a spoon or spatula.
adding the fruit of your choice.

Flour your board and tip the dough onto the board.
the dough should be about 1 1/4  inch thick,
use a cookie cutter to cut out the scones,
This should make about 8 scones.
Double up the amounts for twice as much deliciousness.

Tray Prep

Smear a baking tray with butter.
Space the scones out and brush with some milk.
Check your oven is at the correct temperature.

Cook Em Up

Place the scones in the middle of the oven.
Bake them for 8 to 10 minutes.
once baked, place the scones on a cooling rack.
(Or maybe cut one in half and slap some butter on it, Cooks perk).
