Fruit Cake

Hello everybody! Summer is coming, so I decided to make a really fresh and tasty fruit cake!

Supplies

I used a 28 cm round tray.

For the cake base:

  • 100 g butter
  • 100 g caster sugar
  • 2 eggs
  • 150 g plain flour
  • 1 teaspoon baking powder
  • 1 tablespoon milk

For the pastry cream:

  • 250 ml milk
  • 1 egg
  • 40 g caster sugar
  • 35 g cornflour
  • lemon zest

For the filling and the decoration:

  • 4 tablespoon apricots jam
  • fresh fruit like strawberries, kiwies, peaches, grapes
  • icing sugar

Make the Cake Base

At first we need to cut the butter in small pieces to make it softer, then we have to mix it with sugar, when we have a creamy texture we can slowly add the eggs. Now we need to sift the flour and baking powder togheter and add them to the rest. At the end we can add the milk.

Bake the Cake Base

We have to preheat the oven to 170 degrees , then we can prepare the tray spreading a bit of melted butter and flour inside of it. Now we can pour the cake mix inside the tray and put it in the oven for 25 minutes. When the cake is ready and gold, take it out from the oven and then from the tray and place it on a cooling rack with oven paper.

Make the Pastry Cream

Now it's time to make the pastry cream. First thing we need to put the milk and the lemon zest in a pot and put it on the heat. Then we can take another pot and start to whisk egg and sugar, and after cornflour. When the milk is hot enough and before it start to boil, remove the lemon zest from it and pour it into the egg mix. Now we need to continue cooking the cream, so keep it on the heat and constantly whisking until it become harder and creamy. The pastry cream is ready and we can put it into a clean container with clingfilm on top.

Stuffing and Decoration

When we have both the cake base and pastry cream cold we can finish our fruit cake. Start to spread the apricots jam on the cake base, followed by the pastry cream. After this we can wash and cut our favourite fruits and put them on the cake. It's time to free your imagination! For a shiny result just add some icing sugar on the top.
